Which books would go into the Old and New Testaments was generally established by the 5th century AD. (Before the East-West Schism).
DEVELOPMENT OF THE OLD TESTAMENT CANON:
The Jewish Bible, of course, contains only their established Jewish books. The Christian Church’s bibles have variants of their books listed.
Seven books of the Bible and the Old Testament are accepted by the Roman Catholics and
Eastern Orthodox, but are not accepted by Jews or Protestants. These include 1 and 2 Maccabees, Judith, Tobit, Sirach (Ecclesiasticus)., Baruch, Jeremiah, and Wisdom, and additions to the books of Esther and Daniel, 1 and 2 Esdras.
The Gospels of The Nazarenes, Ebionites, Philip, Peter, and Thomas. Also, Enoch.
DEVELOPMENT OF THE NEW TESTAMENT CANON:
Irenaeus (died c. 202) quotes and cites the 21 books that end up in the New Testament Canon, on-going.
They did not use Philemon, Hebrews, James, 2 Peter, 3 John and, Jude.
Origin of Alexandria in the early 3rd century solidified the use of the same 21 books.
During the next 200 years, there was continual discussion throughout the Church.
Note: By the first council of Nicaea in 325, it was still a work in process.
In 367, Athanasius, Bishop of Alexandria, backed the same 21 books.
It was followed by The Canon of Trent, The Council of Rome, The Council of Hippo, The Council of Carthage (2) Under St. Augustine, who considered it as a finished business, plus a few Pope-sponsored councils.
Thus, from the 5th century onward, the Western Church was unanimous concerning the New Testament Canon.
The last book accepted was Revelations.
In 1546, The Council of Trent reaffirmed the Catholic Canon. (In the wake of the Protestant Reformation). The Greek Orthodox Church at the Synod of Jerusalem of 1672 also finalized their Canon.
NOTE: No Gnostic Canon appeared in any version of the Bible.
